San Mattia Red PGI Verona Red
San Mattia RED is bright and clear. The ruby red filling the glass while being soft has purple reflections, according to Verona grapes. When bringing your nose to the glass, you will immediately recognize the aroma of small red fruits, from strawberries to Marasca or wild cherry. The fresh and lively notes of the almost ripe fruit are well softened because transferred to large wooden barrels that do not upset the wine with woody aromas but give it elegance and a certain harmony. Not too much.
Grapes and harvest
Corvina, Corvinone and Rondinella. Trained with the Guyot system on the hills of San Mattia, they are harvested by hand.
Vinification and aging
Traditionally processed in steel with marc and at a controlled temperature. A part of this wine is quickly transferred into oak barrels.
Pairing
The high acidity and the unmistakable aroma of wild cherry make this wine perfect to match with a wide range of dishes. Excellent with creamed risotto and tasty pasta dishes. It expresses the best of its potential with a good meat dish or medium-aged cheeses. Pairing as recommended by some restaurateurs is unusual but pleasant: served fresh, not cold, with tuna and beef tartare.
Serving temperature
15-17° C, best if opened one hour before serving.
