Amarone Valpolicella Docg
Amarone is the king of our wines. It has a velvety, bright and warm red color. On the nose it first releases elegant hints of ripe cherry and blueberry in a bouquet of red and violet roses, which soon give way to spicy flavors of pipe tobacco, pink pepper, licorice and balsamic herbs. Encompassing on the palate, its alcohol content alternates with the tasty freshness and the pleasant sapidity. The presence of tannins gently dries the mouth.
Rich in aromas of red berry fruits, unmistakable cherry and ripe plum accompanied by notes of toasted cocoa and vanilla.
Very intense and persistent flavor with soft and balanced tannins.
It is let to rest for fifteen months in wooden barrels and for six months in bottles. The remaining refinement part is in steel.
Grapes and harvest
Corvina, Corvinone, Rondinella and Croatina. Trained with the Guyot system on the hills of San Mattia, they are harvested by hand and dried for 100 days on racks.
Vinification and refinement
It is let to rest for eighteen months in wooden barrels and eighteen months in steel tanks
Pairing
This well-structured wine pairs very well with elaborate meat dishes, such as stews or braised meats, with seasoned and blue cheeses or, at the end of the meal, with dark chocolate.
Serving temperature
Open at least a couple of hours before serving and serve at 18°C.
