Valpolicella Superiore Dop
Valpolicella Superiore, with its ruby red color, moves sinuously on the walls of the glass. The fragrance of ripe cherries and a harder note of graphite stand out immediately, followed by hints of violet petals, red rose and spicy and balsamic aromas. On the palate it is hard and balanced. Sapidity and freshness are well present and make sipping vigorous, with a release of the scents perceived on the nose
Grapes and harvest
Corvina, Corvinone, Rondinella. Trained with the Guyot system on the hills of San Mattia, they are harvested by hand. The grapes are partly harvested fresh and partly dried on trellises for about a month
Vinification and refinement
The wine ferments spontaneously and is then refined in large oak barrels for one year.
Pairing
Its strong personality and its pleasant flavor make it suitable for pairings with juicy and elaborate meats, such as game ragouts, baked pork ribs, veal shanks or coda alla vaccinara.Serving temperature
